The trick to weeknight dinners is cooking ingredients that carry over. This plan for 2 people uses one shop and leaves almost nothing in the fridge.
Shopping list
- 1 whole chicken or 6 chicken thighs
- 1 kg potatoes, 3 onions, 1 head garlic, 4 carrots
- 1 bag spinach, 2 lemons, 1 bunch parsley
- 400 g pasta, 1 tin chopped tomatoes, 1 tin chickpeas
- Parmesan or hard cheese, olive oil, salt, pepper, paprika (pantry)
Day 1: tray-roast chicken, potatoes and carrots (about 50 min)
Roast everything at 200°C with oil, paprika, garlic and lemon. Cook all the chicken; set aside a third of it for day 3. Keep the roasting juices.
Day 2: chickpea and spinach tomato stew (about 25 min)
Soften an onion and garlic, add tomatoes and chickpeas, simmer 15 minutes, wilt in half the spinach. Finish with lemon. Leftover roast potatoes can go in to make it heartier.
Day 3: lemon chicken pasta (about 20 min)
Boil pasta. In a pan, warm the reserved chicken in the saved roasting juices, add remaining spinach, lemon zest and parsley, toss with pasta, a little pasta water and cheese.
Why it works
- One oven session on day 1 does the slowest cooking.
- Each herb, lemon and spinach bag gets used twice, so nothing wilts unused.
- Days 2 and 3 are under 30 minutes.
